True to the nature of its eponymous, the history of Hermit Cookies is a reclusive mystery. Some say it’s a very old recipe, dating back to 12th century religious hermitages, made with then commonly available ingredients, and for its ability to endure travel. Others argue that it evolved as bakers threw end of day leftover trimmings into doughs. Then there's the one that it resembles a hermit’s robe. We prefer the version that claims its origins in New England, where they were sometimes made with indigenous cranberries. We honor traditional recipes, making ours with a healthy does of molasses, “English” mixed spices, a hint of lemon, and cut into rectangles.
